Grimm Dragonfruit Sunsets
We couldn’t be happier about Dragonfruit Sunsets, the beer we conceived with our good friend and former Grimm brewer, Theo Castillo. Theo now has his own brewery in Miami called @no_seasons_. For Dragonfruit Sunsets, we started with our beloved flagship hefeweizen, Grimm Weisse. For gentle acidity and brett complexity, we blended it with a few select barrels of oak-aged sour/wild ale that Theo orginally brewed when he was here at Grimm. Then we dosed this coupage with red dragonfruit purée and yuzu juice. The nuclear-red appearance from the dragonfruit makes this look like a splashy hype beer, but the way that the fruity and spicy weissbier notes mingle with the deeper complex tones of barrel-aged sour ale is elegant and profound.

Named after Sean Lawson’s grandmother, Isobell McPeake (a.k.a Mamma Bell) who emigrated to the United States from Ireland, McPeake’s Nitro Stout quickly gained popularity among visitors.
